Ingredients for Beef Stew

  • 2 pounds beef chuck, cubed

  • 4 potatoes, chopped

  • 4 carrots, sliced

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 3 cups beef broth

  • 2 tablespoons tomato paste

  • 1 teaspoon dried thyme

  • 1 teaspoon salt

  • ½ teaspoon black pepper

How to Make Slow Cooker Beef Stew

Add all ingredients to the slow cooker and stir until evenly combined. Cover and cook on low for 8 hours or high for 4–5 hours, until the beef is fork-tender and the vegetables are soft.

Adjusting the Texture

If you prefer a thicker stew, mash a few potatoes directly in the slow cooker or stir in a cornstarch slurry near the end of cooking.
